Only add eggs and water to the mixture and, if you wish, grated lemon zest or a FunCakes flavour paste. You will bake a beautifully flat and tasty cake which you can then decorate in any way you wish.

Preparation method

Preheat the oven to 170 °C (convection oven 160 °C). Make sure all ingredients are at room temperature. For a Ø25 cm cake, mix 400 g mix, 400 g eggs (8 eggs) and 30 ml water in a bowl. Whisk the mixture for 8 to 10 minutes on high speed, then 2 to 3 minutes on low speed. Grease a baking tin and fill it halfway to two thirds full. Bake the sponge cake in the centre of the oven for 35 to 40 minutes. Do not open the oven during baking. The sponge cake is ready when it feels springy. Remove from the tin immediately and let cool on a wire rack.
